Recipe for Thai Green Mango Salad (2 Servings)
1. 1 big green mango, thinly julienned
2. 1 large shallot, thinly sliced
3. 2 mini chillies, thinly sliced
4. 1 handful of roasted peanuts
5. 1 1/2 Tbs of dried shrimp pre-soaked in warm water for 1/2 hour and drained.
6. 2 to 3 Tbs of lime juice, or according to preference
7. 2 Tbs of Yuen Chun Fish Sauce.
8. 1 Tbs of sugar
9. Small handful of roughly chopped cilantro
1. In a mortar and pestle, combine the sliced chilies, sliced shallots, peanuts and dried shrimp. Lightly pound the ingredients until the whole peanuts break up.
2. In a separate bowl, combine the lime juice, Yuen Chun Fish Sauce and sugar and mix until the sugar is dissolved.
3. Combine the sliced chillies, sliced shallots, peanuts and dried shrimp mixture with the julienned mango.
4. Pour the mixture over the salad and add the cilantro and toss together. Serve.
